What are you making for Valentine's Day? Homemade dessert? An elaborate roast? A multi-course meal? Before you do that, let's hit the pause button for one hot second. Are you sure that's what your Valentine wants? Or, like me, are you going over-the-top because deep down, that's what you want. Because if you're S.O. is anything like mine, chips, salsa, and a good sandwich, like this Bacon and Sriracha Chicken Sandwich, would make for perfection.

I could slave away all day over an elaborate meal for Valentine’s Day, I could go frilly and fancy, but that’s not what he wants. He’s as manly as it comes so I figured I'd give him his favorites all in one place: spice, bacon, and beer and that’s how I came up with this Bacon and Sriracha Chicken Sandwich. A little like a club sandwich but a lot better – just be sure to serve it with a good IPA for a knock-it-out-of the park meal. Plus, it takes minutes to prepare, not hours, which means more time to concentrate on the romantic stuff.

Ingredients

  • 1/2 ripe firm-ripe avocado
  • 4 (1/2-inch) slices ciabbata bread

    toasted

  • 6 pieces cooked bacon
  • 2 tablespoons good-quality mayonnaise
  • 1 tablespoon Sriracha or other chile garlic paste
  • 8 ounces cooked chicken

    shredded (about 2 cups)

  • 1 handful baby spinach

Instructions

Mash the avocado until spreadable and then spread on two slices of bread then top each slice with 3 slices of bacon.

Mix mayonnaise and Sriracha and taste -- add more Sriracha until it's too the spiciness you like. Stir the chicken into the mayonnaise mixture and taste, adjusting flavor as desired. Layer on spinach and close sandwich and serve.

Tip

Sriracha is a spicy Southeast Asian chile-garlic paste that really makes this sandwich. You can buy it online or in most grocery stores -- if you can't find it, go ahead and use your favorite chile-garlic paste.
