Mash ups make us indecisive: on one hand we like the concept of combining two of our favorite things but so often we're not sure the sum is better than the parts. Case in point this mash up of Frozen and Breaking Bad (too cynical for us) or this one of Wrecking Ball + Somebody That I Used To Know (we'd just as soon listen to the original versions) but they always get major points for creativity. But if there's a mash up we can totally get behind it's Lillian's beer-mosa where she makes a bubbly mimosa with a grapefruit and wheat beer combo. Does it mean we'll leave behind the free mimosa brunches? Heck no! But it is decidedly something that we're fans of.
Squeeze the juice from 4 of the grapefruit (you should have about 2 cups) then slice the remaining grapefruit into half moon slices and set aside for garnish. Mix together sugar and water in a small saucepan over medium heat, stirring until sugar is dissolved. Cook for 5 minutes then remove from heat and allow to cool.
You can use storebought grapefruit juice but you'll have to adjust the syrup amount depending on how sweet it is. Syrup can be made up to one month ahead -- store at room temperature until ready to use.
Place 1 half moon of grapefruit and some ice into each glass. Pour half a bottle of beer (about 6 ounces) into a tall glass then add 2 ounces of grapefruit juice and 1/2 ounce of the simple syrup mixture. Stir and serve.
