Make The Simple Syrup: Mix together sugar and water in a small saucepan over medium heat, stirring until sugar is dissolved. Cook for 5 minutes then remove from heat and allow to cool.TIP: Simple syrup can be made up to one week ahead of time. Store refrigerated in an airtight container until ready to usee.
Make The Beer Mimosas: Squeeze the juice from 4 of the grapefruits (you should have about 2 cups) then slice the remaining grapefruits into half moon slices and set aside for garnish. Place 1 half moon of grapefruit and some ice into each glass. Pour half a bottle of beer (about 6 ounces) into a tall glass then add 2 ounces of grapefruit juice and 1/2 ounce of the simple syrup mixture. Stir and serve.
