When you love Spring as much as we do, you just. can’t. wait.
The produce can’t come in fast enough. Bring on the asparagus, artichokes, peas, and everything green. Oh, and some berries for good measure too.
Speaking of berries, we’re using a lot of them this weekend because there are not one, not two, but three things to celebrate at Salt & Wind including a birthday, Easter, and Passover. Speaking of Passover, this year we joined in on the Passover Potluck over at ToriAvey.com. If you don’t know Tori, she’s aka the Shiksa In The Kitchen and knows a thing or two about cooking kosher. For the holiday, we’re sharing these Cacao Raspberry Ripple Rochers, which are kosher, gluten-free, and vegan, but lots and lots delicious.
Yes, rochers look a lot like meringues because they’re kinda a more laidback, less perfect version. We first had them at Tartine Bakery in San Francisco and liked that they’re chewier, softer, and more complex than most meringues. Add to that some cacao nibs, cocoa, and a ripple of raspberries and you’ve got our favorite recipe of the moment.
