1/4teaspooncrushed red pepper flakesor ground red pepper like paprika or Piment d'espelette
pinchfennel seeds(optional)
1/2teaspoonkosher salt
1cup cannedCalifornia ripe olivesdrained and finely chopped
1handfulfresh Italian parsleyfinely chopped
1/3cupfinely grated Parmigiano-Reggiano cheese
Instructions
Combine the olive oil, garlic, and rosemary in a medium frying pan and heat over low heat until the mixture simmers about 4 minutes.
Turn off the heat, remove the pan from the stove, and add red pepper flakes or ground red pepper, fennel seeds, and salt. Set aside for 5 minutes to cool slightly
Mix the grated cheese, parsley, and olives in a flat-rimmed serving dish. Discard the rosemary, pour the olive oil into the serving dish, and mix to combine evenly. Taste and add additional salt and pepper as desired. Serve with focaccia, bread, or freshly cut vegetables like fennel, cucumber, carrots, and radishes.
