Pizza for brunch may not be usual for you, but, when you try this Serrano Ham, Manchego, and Asparagus Pizza topped with a fried egg, we think it quickly will be.
2tablespoonsextra-virgin olive oildivided plus more for garnish
kosher salt
Freshly ground black pepper
1poundfresh whole wheat pizza dough
1/4cupfinely grated Parmigiano-Reggiano cheese
3ouncesManchego cheesesliced paper thin
4largeeggs
4slicesSerrano hamor Prosciutto
Instructions
Prepare The Asparagus: Heat oven to 425°F and arrange a rack in the middle. Place a rimmed baking sheet on the rack while the oven heats up. Trim the ends of asparagus and discard. Slice asparagus into 1/2-inch pieces then toss with 1 tablespoon of the olive oil, a pinch of salt, and some freshly ground black pepper.
Roll Out The Pizza Dough: Meanwhile divide dough into 4 pieces then roll each piece to an 5-inch circle on a piece of parchment paper. Pierce the pizza dough in several places to prevent it from bubbling up unevenly. Divide Parmesan evenly among the four pizzas then top with Manchego and asparagus. Top each pizza with a drizzle of olive oil.
Bake The Pizzas: Carefully remove the baking sheet from the oven. Using the parchment paper, transfer two of the pizzas to each baking sheet then quickly place in the oven. Bake pizzas for 5 to 8 minutes then swap baking sheets between racks and, if using, add an egg to each pizza at this time.
Crisp The Ham: Meanwhile, place the ham in an ovenproof pan or another rimmed baking sheet and place in oven 5 minutes or until just crisp. Continue baking until the crust is crispy, cheese is melted, and underside of dough is golden brown, about 5 to 8 minutes more. When pizzas are ready, remove from oven, top each with a piece of ham and serve immediately.
