Do you remember that scene in Snow White when she gets dressed by chirping birds, and all is lovely and perfect?
That is not how we wake up. We're more of the hit the snooze button 90 times and get us a vat of pour-over coffee crowd. So, most of the time, breakfast gets the shaft around here. And that's a shame because breakfast should be a cheery start to the day. So, we're bringing a sunny disposition to breakfast with this Mango Coconut Berry Breakfast Lassi.
This layered Lassi situation with one part cardamom mango and one part coconut raspberry? This is how the day should start. It's brightly colored, filled with flavor, and, because we can never seem to get all our servings of fruit and veggies, gets a boost with protein packets. We'll never be Snow White and have rainbows, bunnies, and chirping birds greeting us upon waking, but at the very least, we can have something bright, healthy, and ready in 5 minutes flat.

Make The Mango Lassi: Combine mango, yogurt, 1/4 cup of coconut milk, 2 tablespoons of coconut sugar or honey, vanilla bean paste, and cardamom in a blender and process until smooth. Add 3 to 4 ice cubes and process until broken up and smooth. Taste and add more honey or other flavorings as desired. Divide among 4 to 6 tall glasses, filling each glass about 2/3 of the way.
Make The Berry Smoothie: Taste the berries to see how sweet they are — if they’re very sweet use 2 tablespoons coconut sugar or honey and if they aren’t that sweet use up to 4 tablespoons. Combine berries, remaining coconut milk, remaining coconut sugar or honey, and ALOHA Daily Greens Berry packets in the blender and process until smooth. Add remaining ice and process until broken up and smooth. Taste and add more honey or other flavoring as desired. Divide among glasses then garnish with berries and serve.
