- 3 handfuls baby arugula
- 2 firm-ripe avocado halved and pitted
- 1 pint grape or cherry tomatoes halved
- 1/2 cup sliced jarred hearts of palm
- Parmigiano Reggiano cheese thinly sliced
- 1 handful pine nuts
- 1 lemon halved, for serving
- Extra-virgin olive oil for serving
- Sea salt for serving
Instructions
- On a serving platter, scatter the arugula, tomatoes, hearts of palm, avocado, pine nuts, and cheese. Top with a squeeze of lemon, a drizzle of olive oil, a pinch of sea salt and serve.
