Consider this the Little Black Dress of salads -- it works in any occasion and can be dressed up or down depending on the occasion. This wild rice salad came from very humble beginnings (aka me cleaning out the fridge) and then I started sharing it with everyone around me: first for a casual lunch with the bf, then a dinner with the family, and finally at this year's Thanksgiving in attempts to make it a (slightly) healthier holiday. It ended up being the star of the supper and, as such, it has been requested again for Christmas Eve -- proof that I'm not the only person in love with this salad.
Mind you, we're a divided home: equal parts meat and potatoes and clean eating but this wild rice salad somehow bridged the gap. Chris and I ate the leftovers in the days following Thanksgiving in attempts to eat healthy and found ourselves doing every variation possible: folding in avocado, some crumbled feta, adding in shredded roast chicken and nixing the greens for a wild rice side dish. For a Little Black Dress of salads, I'd say it's doing pretty well for itself!
