Sometimes you want things to be so simple that dinner is nothing more than dump and stir and set a timer. That's when you should make a one pot pasta. During the warmer months, I make this Tomato Basil pasta and, when it cools off, I make a Pumpkin Chipotle version

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 handful Fresh flat-leaf parsley leaves
  • 1 handful fresh basil leaves

    plus more for garnish

  • 1/2 medium red onion

    halved and thinly sliced

  • 12 ounces grape or cherry tomatoes

    halved

  • 3 garlic cloves

    thinly sliced

  • 1 pinch kosher salt
  • 1/4 red, orange, or yellow bell pepper

    thinly sliced

  • Parmigiano Reggiano cheese

    grated for garnish

  • crushed red pepper flakes

    for garnish

  • 1/4 cup dry white wine

Instructions

Place olive oil in a medium pot and set over medium heat. When the oil shimmers, add in the noodles, herbs, onion, tomatoes, peppers, wine, and red pepper flakes (if using).

Bring mixture to a boil then cook, stirring frequently so the pasta doesn’t stick, until the pasta is al dente, about 12 to 15 minutes. Add some more water or some broth if the pasta starts to get dry. Serve immediately topped with fresh basil, lemon zest, and/or shredded cheese.
